| Fabulous Chicken Salad |

Chicken breasts, de-boned |

Sesame oil |

Shoyu or tamari |

Mirin |

Garlic, minced |

Vidalia or sweet onion, diced |

|
Red bell pepper, diced |

Fennel or celery, diced |

| 1/2 cup |
|
Parsley or cilantro, finely chopped |

| 1/4 cup |
|
Roasted walnuts |

|
Fresh horseradish, grated (optional) |

| Dressing |
|
| 1/4 cup |
|
Olive oil |
|
| 2 TB |
|
Balsamic or apple cider vinegar |

Juice of half lemon |

| 2 to 4 drops |

Heat oil in a skillet, add garlic and sauté on medium heat for 2 minutes. |

Add chicken and sear on both sides. Add shoyu or tamari and enough water to prevent scorching.

Reduce heat to medium low, cover and sauté for 10 to 15 minutes on each side, depending on its thickness. |

Add mirin and cook 2 more minutes.

Allow to cool. Cut into bite-size pieces and place in a serving bowl with salad ingredients. |

Mix dressing ingredients and combine well with the chicken salad. |

Marinate in the fridge for at least 30 minutes. |
