I couldn't get enough of this tasty salad when I lived in Italy. I'm certain you'll enjoy it, too. This version is quite mild tasting, but if you prefer it more spicy, add a dash of cayenne pepper.
1 lb.
Squid (tubes and tentacles), cleaned
1 cup
Tomatoes, diced
1 cup
Onions, diced
1/2 cup
Parsley or cilantro, finely chopped
Dressing
1/4 cup or more
Lemon, lime or keylime juice
2 cloves
Garlic, minced or pressed
1/4 cup
Olive oil
2 drops
Stevia
Sea salt to taste

Boil the squid in enough water to cover until opaque, about 2 minutes. Drain and cool. Slice tubes into small rounds. Slice larger tentacles in half. Place in a bowl with the rest of the salad ingredients.

Combine dressing ingredients in a cup and toss with the salad.

Chill for 30 minutes before serving. Adjust seasonings to taste.
